[!!!][FEATURE] Only allow ISO 4217 currency codes

Payment providers usually require an ISO 4217 currency code. The currency field is currently a string field, which allows to use any currency (e.g € or DKR).

Change the TCA text field to a select field and ensure, that currency names can be translated in frontend and backend context.
