[Feature] Allow for Additional Date Formatting

I have searched the existing feature requests to make sure this is not a duplicate request.

Please consider adding different date formatting options such as the addition of the spelled out (or abbreviated) day of the week (Tuesday or Tue) for example.

I've experimented with adding "ddd" and "dddd" to the image_date_format variable in the config file but that does not seem to have the desired result.
