Better instructions and infra for running

The instructions are currently limited, and don't even mention that the Node should be configured with CARTESI_FEATURE_INPUT_READER_ENABLED=false
Maybe we could copy the procedure that the CI does: maybe a Makefile `run` command that clones the appropriate rollups-node version and configures it with the appropriate vars? This could then be used by the CI itself?
