Dropping support for PHP 8.0 and older

My next step will be dropping support for PHP 8.0 and older, which is not considered to be a BC-break as your tooling will prevent you from installing a newer version without breaking anything (see doctrine explanation).

@bobvandevijver the explanation of the doctrine is clear. Composer is the best dependency manager.

After some research, I noticed that other libraries had also removed the compatibility of old PHP versions in a minor version.

It's ok for me!
