Reason/Context

This Issue is used to track changes needed to support AsyncAPI v3. As a code owner, please edit this list of TODO tasks in order to properly track the progress 🙂 Once this issue is closed it means that v3 is now fully supported in this library.

This issue is being worked under asyncapi/cli#1790

Due to internal API changes across multiple tools such as validate, generate, the code needs a rehaul. Currently v3 documents don't work with server-api.

Scope of work:

• Re-write and clean up code for v3 support in server-api.
• Maintain backwards compatibility for v2.
• Release v2 probably (like /v2/generate)
