Manual mode

I am running a Skywalker with a modification to run Artisan. While learning to roast with a good DOR I want to run Artisan with manual settings. I have run it with a background profile but it seems to always wants to use PID. In order to rum in complete manual mode, must I have a blank screen? I can not have a background image? I unchecked the PID box and clicked on Manual in the pull down menu and created the buttons I needed. My PID roasts have not been ideal and I want to control it manually for the time being.
