Update poms to the new Nexus 3 release process

• check for required project metadata - https://central.sonatype.org/publish/requirements/
• review groupIds
• review modules to be skipped or ensure they have source jars/javadoc, etc - https://central.sonatype.org/publish/requirements/
• add properties for staging
• users of the release-plugin can remove configuration overrides - https://github.com/jboss/jboss-parent-pom/blob/jboss-parent-50/pom.xml#L541-L546
