Addon Exterior datapackable exteriors fix

What happened?

This happened!

Steps to reproduce the behavior:

1. make a custom exterior using the Addon Exterior
2. make an exterior datapack (like making one for main ait)
3. open game, then monitor
4. see crash

Caused by: java.lang.NullPointerException: Cannot invoke "dev.amble.ait.data.schema.exterior.ExteriorCategorySchema.equals(Object)" because the return value of "dev.amble.ait.data.schema.exterior.ExteriorVariantSchema.category()" is null
