Hi I'm looking for a more customized UI as explained in here but for Vue 3. Since I want to change the UI that is provided with Autocomplete. I'm guessing we need to use autocomplete-core with Vue for that.

That makes sense. We wrote a single guide for custom UIs showcasing React, but all the concepts are similar in Vue so you should be able to follow it along. You need to use @algolia/autocomplete-core as well indeed.
