Deploy local abctl instance with a different connectors registry

As said in the title, I would like to deploy a local instance of Airbyte OSS but with a smaller connectors catalog. This is needed to scale up after introducing my custom destination. Is it doable? I've found nothing within the documentation. I know I can use values.yaml, but I've also seen nothing about configuring it.
