Posts without Date are sorted lexicographically - how to prevent this and define a custom ordering ?

I have a section called Projects on my portfolio and no date is associated with the projects. Currently, it lexicographically sorts the projects but instead, I want to define the order in which they should be shown. I tried googling, but I am unsure where to look.

Any help is appreciated.
