I've 1) updated site_theme to "dark" and 2) creates _sass/theme/_dark.scss and _sass/theme/_default.scss. This error occurs when I'm trying to import "themes/dark" and "themes/default" into assets/css/main.scss. Any support is appreciated in making dark mode work!

Sounds like you don't have the latest version of the template. Make sure you update your fork of the template to get the latest changes.

If I Sync fork, will I be losing all the changes I've made on my own (such as adding my own papers, etc.)? Because it appears that the Sync Fork option is asking me to discard all of my commits.

Syncing may result in some merge conflicts due to changes, but none of your commits will be discarded. Any additions should be unaffected and if you didn't make many customization changes to the template then you shouldn't see that much by way of merge conflicts either - although it's a good idea to backup the _config.yml file before syncing and restoring with your older version since that has had a lot of updates.
