Proxy for UDP

Hello world, i'm looking for a way to use OMR in streaming context: i want to transport SRT stream and WebRTC videocall. We usally make it work using V2Ray proxy, but sincelast update there are more option about V2Ray, like VLESS, VMESS and Trojan. What is the difference between them, and what do you suggest to use? And what is the difference between V2Ray and XRay? Thanks :)

Again in reference to the previous question, if a proxy for UDP in TCP is implemented, in which of two situation we are in?

Reading RFC 6824, I understood that that MPTCP is a "standalone" transport protocol, so potentially multipath segments could arrive directly to Proxy (or VPN) server in VPS. Does the VPS always "de- bond" into a single TCP flow? Referring to RFC 6824, MPTCP should be “transparent ” to upper and lower layer of Network stack, so a single flow should arrive at application level to Proxy Server, could someone confirm that?
