I've always found it weird how you can only use the different keep types in freebuild mode and are stuck with only the default 'Stone Keep' in skirmish/mp.

Natively you can convert a scenario map into a skirmish map in the editor, however playing the converted map will just turn the other keep types back into the 'Stone Keep'.
