Support for “Claude 3.7 Sonnet Thinking” for the AWS Bedrock provider.

Now I see bedrock added the Deepseek R1 serveless api, since it's also using thinking, do we know if we're gonna support extended thinking for bedrock provider?

FYI, I am working on a PR that will enable extended thinking for Anthropic models in Bedrock, it already works locally. I had to do more changes than I expected, there were some hacks in how Bedrock events are processed, so I will reach for guidance to people who did those hacks before proceeding with my improvement.

@mrubens, @hannesrudolph, you were the last contributors to /src/api/providers/bedrock.ts who added custom type definitions at the beginning of the file and used those custom types for processing incoming chunks. When I switched to types provided by AWS SDK, I immediately saw many type inconsistencies, which I had to fix in order for extended thinking to render properly. Do you remember what was the reason for defining your own types instead of using AWS SDK's?
