My below PR has recently been approved and merged into LHM. So, Gigabyte X870 Xtreme AI Top should be implemented in FanControl the next time that FanControl updates to the latest LHM code (probably FanControl v216). As for the rest of the Gigabyte X870 motherboards, I created Reddit Post - Gigabyte X870/X870E Motherboards - Temporary Fix/Implementation if you want to try to see if it works for your Gigabyte X870 motherboard. That post has a DropBox link for the 3 LHM files. Currently, the only boards confirmed working are Gigabyte X870 Xtreme AI Top & X870 Aorus Elite WiFi 7 Ice. The non-Ice probably works too.

The Gigabyte X870E Xtreme AI Top motherboard does not fully work in FanControl currently, because it is not yet implemented in LibreHardwareMonitor. Currently, only the first chipset is detected. The second chipset and the embedded controller are not being detected, so various fans and sensors are missing.
I added the code myself and created PR 1647 - Add Support for Gigabyte X870E Xtreme AI Top. With this code, I'm able to see the fans/sensors of the 2nd chipset and embedded controller.
