Change download call in Dockerfile

I just noticed that the downloadJdbcDrivers() function allows you to set dbms to "all" to download all JDBC drivers. We may want to use this in the lines below, so that we don't need to keep calling out specific dbms flavors:

Hi @anthonysena, any chance this commit can be merged? I was about to submit a PR that added iris to the list of downloaded JDBC drivers, but your change should be more practical long-term.
