Is it possible that under special circumstances xdrip could uninstall itself?

Perhaps this can all be explained conveniently, or maybe the result of an often distracted character (myself).

But, nevertheless, I want to come out and ask these questions to fellow users, devs and general audience, just to clear my weary mind.

I don't really know of any mechanism that an app can uninstall itself so I don't see how that is possible.

The BlueJay project provides network services that support xDrip Sync which is why you might see connections there.

I don't remember having xDrip sync set up.

Could you please point me to documentation on that? (xDrip sync, I mean)? I don't know if I inadvertently activated such functionality, I fail to see where could it be needed in my use cases.

You can find it under Settings > xDrip Sync Settings.

If you have Be master for followers, enabled, it is active as a master.
