Starting service shows nothing in existing log

I have this up and running a raspberry pi zero w.   But it doesn't seem to show the existing log when I launch the service. 
This is misleading and makes me thing the log service isn't working and the logfiles that I'm watching aren't working as well as the service writing logs out to the logfile.
