Support OLLAMA_MODELS Environment Variable and Custom LM Studio Config Path

It would be beneficial if the Ollm-Bridge script could:

• Read the OLLAMA_MODELS environment variable, if available, to determine the model storage location.
• Ask for or take argument for path for custom LM Studio's configuration location, rather than using a fixed location.
