How to add ENV variables for a MCP server?

When adding a server I can't find where to specify the server's env variables, isn't the mcp gateway acts as a mcp client?

To configure environment variables for the various servers you're adding - requires configuring them where you are starting the respective servers. For example, if you are running your MCP servers via mcpgateway.translate or npx -y supergateway, or running them via Docker, etc.

So every MCP server I connect has access to all the env variables of all other servers?

No, they would each have their own, inherited from whatever shell (or environment) you start them with
