'|' doesn't display properly in README table

+ Cannot use `=|=`, `~|~`, or `|` in table as the `|` will be interpreted as a column separator.

+ Cannot use `=\vert=`, `=\vert{}=`, `~\vert~`, or `~\vert{}` as these just display the literal text

+ Currently using a plain `\vert`
