Consider adding Acorn options to Rollup config section

Following up on this issue, would it make sense to be able to configure Rollup/Acorn settings form snowpack.config.js, like below?

module.exports = {
  installOptions: {
    rollup: { 
      acorn: { ecmaVersion: 2020 },
      acornInjectPlugins: { require('acorn-private-methods') }
    }
  }
}

For now, I had to resort to a custom plugin, add it took me a day to figure out the mechanics of snowpack/rollup/acorn workflow 🙂

Really appreciate the time it took to build that plugin! I'm on board with adding acornInjectPlugins but I'd like to first see how far we can get with #1282, which I think would also solve this issue.

In the meantime, I'd love a PR to add that plugin to our list of community plugins on snowpack.dev

@FredKSchott no worries, it was fun! Just to clarify, where would you like to list @concision's Acorn Plugin Injection at?
Is it 07-plugins.md or README.md?

both would be great! We're cleaning this up now, but for the moment both lists are useful
