Simple tabular format for Activity/Process to manage them on github

Is anyone maintaining activities/processes in a simple tabular format that can be maintained and edited ideally in github?

I'm looking for a format that we can can agree on and represent like this

where each records represents an Exchange

I imagine fields like

Flow
Location
Amount
Unit
Comment
.... and more

we have plenty of formats with fields to represent these.. but can we agree and demonstrate one?
