Theresa, Now that I'm looking at this on my own, I'm wondering if your first mutate point caused the multiplication of households later? Perhaps that should be a character level? I could be way off base.

Matt, the second of both pairs of graphs are telling a clear story--nice work! When you added that geom_smooth to the geom_point on estimated incomes, it really got easier to read and much cleaner. Thanks for sharing both versions.
